Unlike regular dandan noodles, the use of soy milk increases the concentration and gives it a creamy taste! There are different types of soy milk, but we recommend using ★ "unsweetened soy milk" ! It can be used with any seasoning, so it's perfect for use in cooking!

★How to make soy milk dandan noodles

~Ingredients (for 2 people)~
peanut butter 1 tablespoon
Chinese cabbage 1 bunch
garlic 1 piece
ginger 1 piece
Sesame oil Appropriate amount
ground pork 150g
Chinese noodles 2 balls
Green onion (chopped) 10cm
Pickled mustard greens (chopped) 2 teaspoons
chili oil Appropriate amount (to taste)

Alcohol 1 tablespoon
soy sauce 2 tablespoons
Sweet noodle sauce 1 tablespoon
Doubanjiang 1/2 teaspoon

chicken stock 200ml
vinegar 1 teaspoon

~procedure~

  1. Boil the bok choy. Boil the core for 20 seconds, then add the whole thing and boil for another 20 seconds. (👩When boiling the core, it's easy to burn your hands, so we recommend using chopsticks or tongs!)
  2. Finely chop the garlic, ginger, and shiitake mushrooms. (👩 If you want a bit of texture, chop them like arare (rice crackers), but if you want to cook them more easily, chop them finely! When I cooked this time, I cut them somewhere between chopped and finely chopped!) Minced
  3. Add sesame oil to a pot and stir fry the garlic and ginger until fragrant and the ingredients turn amber, then add the ground pork and shiitake mushrooms. Once the pork is cooked through, add the peanut butter and the seasonings marked with a ★1 and stir fry.
  4. Remove the ingredients from step 2 to a plate, add ★2 to the same pot, and heat until just before boiling to make the soup. At the same time, boil the Chinese noodles in a separate pot according to the package instructions.
  5. Put the noodles into a container, pour in the soup, and top with (2) bok choy, green onions, and pickled mustard greens, then drizzle with chili oil and it's done!

(※) After adding the soy milk, turn off the heat just before it boils. When you start to see a few bubbles and steam coming out, that's a sign to turn off the heat!
(※) If you don't have pickled mustard greens, we recommend substituting bamboo shoots or something with a nice texture!
(※) The use of soy milk gives it a mellow flavor, so if you want it to have more punch, add a little more chili oil!
